Today’s snack was fruit salad. I wanted a creamy “dressing” for it but not something mayo based. So I whipped up a little something with Greek yogurt. (bad picture, sorry)
These nutrition stats seem a little high, calorie-wise. I’m guessing I overestimated the dried cranberries I put in it.
The recipe, if you can call it that, couldn’t be simpler and is pretty much to taste. I used about 1/3 of an apple, 1/2 an orange, 1/2 a banana, a few dried cranberries and walnuts. For the “dressing” I took a single-serve container of Greek yogurt (plain) and added a splash of vanilla and OJ (I only used a bit of this concoction in this salad; I’ll use the rest later.) I added Nutrasweet this time to sweeten it a little but next time I’m going to go with honey.
