Texas Caviar

You may be looking at the title thinking, “Ew!”  But, give it a try.  It’s really yummy.  If you Google the recipe, you will find a plethora of them with many different ingredients.  Let’s call mine the no frills version.

Texas Caviar

1 can of black-eyed peas, drained and rinsed
1 can of corn (white or yellow), drained and rinsed
1 can of diced tomatoes, drained and rinsed
2 green onions, chopped
1/4 cup of canned green chiles (optional)
1/2 cup light Italian salad dressing
salt and pepper to taste

Mix together all ingredients.  Cover and refrigerate for at least 2 hours. Serve with tortilla chips.

Like I said, no frills.  Lots of recipes call for fresh chiles and most call for fresh tomatoes.  I find that it is just as good with canned. I don’t care for spicy so I either don’t add the chiles or just add a small amount.
